I decided to make gnocchi this weekend instead of the pumpkin dish, since I had most of the ingredients already. I've had a dish like this before at Ibby's, a restaurant on WashU's campus, but I couldn't justify spending $17 in meal points for a small portion of this when I could make it at home for pretty cheap in comparison.
I started off by breading a couple chicken breast pieces I had left in the freezer. Panko is great so I didn't have to do the whole flour-egg-crumbs procedure, which makes a huge mess. I just melted some butter with chili powder, garlic salt, and pepper, dunked the chicken in the butter, and covered it in a mixture of panko crumbs, grated parmesan and garlic salt. I baked them at 400 for about 17 minutes, turning them over halfway, and they turned out great!
I used frozen gnocchi I got at Schnuck's because I've never had the time, motivation, or potatoes to try to make my own gnocchi. (One day!!)
For the sauce, I simmered together some creme fraiche (I already had this in my fridge, but whipping cream would work just as well), a little garlic salt, a few splashes (very large splashes) of white cooking wine, and a lot of grated parmesan. I found that the parmesan has a pretty low solubility constant (lolz) because I had to keep it boiling to keep it from getting all clumpy. Maybe I'll add less next time. >.>
I topped the finished gnocchi with quartered cherry tomatoes and some basil leaves I picked from Jen's basil plant on our windowsill. Ta-da!

Goal for This Week: Find a Cheese Pumpkin

It's the perfect time of year for a pumpkin recipe! I'm curious to know what exactly a cheese pumpkin is, I've never heard of it. But that's not saying much, since I'm no pumpkin expert. But I suppose if I strike out with the cheese pumpkin I can always use a butternut squash and all will be well.
Since I get this Friday off work (it's staff appreciation day or something like that?) I'll have plenty of time to put this together. I'm so excited! Om nom nom.
